VEZHAKKAI   MEZHUKKUPURATTI

This is a traditional stir fry from Kerala where Vezhakkai means Cooking banana / Raw banana and Mezhukkupuratti means Stir fry. This is generally a part of their meal. This stir fry can also be made by replacing Banana with Sweet potato / Potato / Yam . Majority of cooking is never a Fireless Cooking.





Ingredients :-

Raw Banana – 4 in number

Coconut oil – 1 ½ tbsp

Mustard seeds – 1 tsp

Curry leaves – 10-15

Green chili – 1, slit vertically into two

Onion – 2 medium, not too finely chopped

Turmeric – 1 ½ tsp

Red chili powder – 1 ½ tsp

Coriander powder – 1 tsp

Salt – to taste

 

Method :-

1.      Peel the raw banana and cut into 1” dices. Immerse the dices into salt water. This process shall not let the cut pieces to discolour and bananas will absorb a little of salt too. The dipping process shall be done for 10 minutes

2.      In a pan, heat oil. Splutter the mustard seeds and curry leaves in this.

3.      Now add green chili and onion. Sauté the same till onions turn translucent.

4.      Put the dry masalas – Turmeric, Red chili powder, coriander and salt. Mix Masalas well and ensure they release flavours and not burn.

5.      Now, drain water from bananas pieces and add the same into pan. Mix well

6.      Cover the pan and let it cook for 10 – 15 minutes. Ensure that the same is well stir fried by mixing at regular intervals. This will also ensure that the banana pieces don’t stick to bottom by any chance.
