Ghewar – It’s a traditional Indian sweet from Rajasthan. They
are generally consumed during festivals like Rakshabandhan or Bhai Duj. The
sweet is mildly crispy, has layered effect and looks like a honey comb.
Ingredients :–
Ghee – ¼ cup
Cold Water – ¼ cup + ¼ cup + ¼ cup
Cold Milk – ¼ cup
Maida – ¼ cup
Besan – ¼ tbsp
Lemon juice – ½ tsp
Ice – 4 pieces
Oil / Ghee to fry
For Sugar syrup – ¼ cup sugar + ¼ cup water to make 1 string
Sugar syrup + a pinch of cardamom powder + a pinch kesar
Method :–
1.
In a blender, add ghee and ¼ cup water and blend
a little

Put in this, milk and blend again.
3.
Now add half of maida & ¼ cup water and
blend again
4.
Blend in this ice, besan and lemon juice. This
will help in making a smooth batter.

Now put in this the remaining maida and ¼ cup water and blend.
6.
Heat Oil/ Ghee in a small pan – of the size that you
want a Ghewar of or you may place a metal cutter in between to get the shape. Once
hot, lower the flame and the oil/ghee to get a little cool
7.
Pour the batter one spoon/ ladle each time – one
on the top of other to form jalis /layers.
8.
Keep making a hole in centre with a spoon and keep
pouring the batter
9.
Once the thickness is of choice /need, stop
pouring the batter. Let it cook till golden brown
10.
The Ghewar will leave the edges and start
floating in oil/ghee.. Remove the Ghewar and let it cool
11.
In another pan, put in sugar and water to make
the sugar syrup. Once sugar dissolves, add cardamom powder and kesar. Once ready
syrup of 1 string, let it cool
12.
Dip the Ghewar in syrup and put it on rack to
drain the access syrup. You can also pour the syrup with a spoon on Ghewar
rather than dipping
