MUD BANANA CAKE

This deep dark chocolate banana cake, is like a delight to eyes on dull boring weekday.  I had made this during this lockdown period to curb my craving for sweets. I had a small piece everyday, making  me feel pepped up and happy during the boring lockdown times. I tried to make little better on health by replace some maida (all purpose flour) with some oats and some part of butter with olive oil. Its heavenly homemade


Ingredients :-

Maida - 1 cup 
Oats - 1/2 cup crushed
Baking poweder - 2 tsp
Baking soda - 1 tsp
Dark Coco Pwder - 4 tbsp , I used Hershey's Dark Choco powder (unsweetend)
Butter - 80 gms
Olive oil - 1/4 cup
Vanilla essence - 1 tsp
Ripe Bananas - 2 , mashed properly
Powdered Sugar - 1/2 cup

Method :-

1. Prepare a dry mix by sifting all the dry ingredients in a bowl twice or thrice. The purpose of sifting is to ensure proper mixing and breaking of granules into fine ones to avoid any lumps further .

Dry mix –Maida  + Crushed oats  + Baking Powder + Baking soda + Dark Coco powder

2. For Wet mix, Put butter (unmelted ), olive oil  and powdered sugar in a bowl and beat it with a beater for say 5 minutes or little more till it get creamy and changes the color a little from yellow to white

3. Fold in the wet mix, mashed bananas well. 

4. Add the dry mix to wet mix and fold well. Beat with a beater for 1 or 2 minutes to ensure proper mixing and a good consistency of batter. If you need to loosen the batter a little, add cold water gradually (1 tbsp after 1 tbsp until the consistency is achieved). Consistency will determine moisture in cake. By any chance if your cake is dry and crusty, when you remove it from bake, if you find the upper layer little hard, cover the cake while in mould only with damp cloth and let it cool completely .this will induce and secure moisture again in cake

5.Preheat oven at 180 degree and bake for 40-45 minutes . if needed you may increase time by 2 minutes with a gradual progression , if need be. I had not needed

 

Enjoy this orgasmic chocolate cake on a hot sunny day, on a windy and rainy day and yes with hot coffees in winters !!!
