WHOLE WHEAT BUN (PAU)


Whole Wheat Bun or what we call as Pau  in India. Trust me, lockdown makes you do any and everything. With all my daily chores, studies, professional duties – Just out of my love and desire to have sumptuous & different food everyday , I end up making some or the other new dish. Today I am making a famous Gujarati Dish called SEV USAL. This dish is made of dried peas, sev (which is fried snack made of Gram flour) and yes definitely needs PAU.


Sharing my recipe with of Whole Wheat Bun with you…

 

Ingredients –

Whole Wheat Flour – 2 cups

Sugar – 2 tbsp

Active dry yeast – 1 tbsp

Salt – 1 tsp

Oil – 2 tbsp

Warm water – Approximately 1 cup

 

You can also add flavours of choice like thyme, pepper, mixed herbs, garlic powder etc as well to make it amazing and tasty.

 

Method –

 

1.      In a small bowl, add around ¼ cup warm water, yeast and 1 tbsp sugar. Mix this and cover. Let it sit for 10-15 minutes for yeast to activate. The other steps shall only follow if the yeast activates and raises well.

2.      In a big bowl in which you shall knead the dough, put the wheat floor. Make a well in the centre.

3.      In this well, add salt, remaining 1 tbsp sugar, oil and the yeast mixture. Mix well and knead a dough with warm water.

4.      Dough should be lose one – almost like the one made for Fulka rotis.

5.      Grease the bowl and place the dough in centre. Cover with cloth and rest for 50 mintues – it will double up. Or might even proofing more than double

6.      Sprinkle the flour on floor and place the dough on this. Knead the dough for 15-20 minutes till it gets non sticky and outer layer is smooth.

7.      Now cut the dough into equal small portions and make into small balls, pinching all cracks and smoothening the outer layer

8.      Grease a tin which is 4” inch. Now place the balls close to each other leaving 1 cm gap in between all the dough balls.

9.      Brush milk on these and sprinkle sesame seeds on this. Cover with cloth and let it sit for 40 – 50 minutes. The buns will rise up to tin’s upper level or even more.


10.   Preheat the oven at 200 degree celcius and bake for 18-20 minutes. Upper crust will be nice red brown in color.

11.   Once removed from the oven, rub a cube of butter and over with damp cloth. Let the bun cool down totally

12.   Ready to serve.
